I have a Paderno Spirooli and love it! Making raw vegetable noodles is kind of fun...and easy:) I was diagnosed with Gluten intolerance / Celiac 3 years ago and as a pasta lover that was a killer to hear. I tried all kinds of gluten free pastas and didnt love any of them. I ate at a local Raw foods restaraunt and was introduced to spiral veggie noodles...and i was hooked! I had a zucchini noodle dish...and fell in love with the tender fresh and healthy new 'noodle' idea:) I bought a Paderno Spirooli that day and adore it...:)
This recipe is so easy! Get your Paderno Spirooli ready ...
Cut the ends off of a straight Zucchini, Sweet potato, Really big thick carrot
or whatever squash you love ( the softer ones are easier to use, the sweet potato take a bit more work but are worth it) For my recipe i used a zucchini and a carrot.
The basil pesto can be made in a food processor or a blender. I have a Vitamix 5200 which makes the job a breeze and you get a super creamy sauce. If you dont have a high powered blender yet, the Vitamix rocks.
Ingredients
- 1 or 2 straight organic zucchini
- 1 thick straight organic carrot
- 1/2 cup raw cashews (pre soaked)
- 1/4 cup raw pine nuts (pre soaked )
- 1 clove of organic garlic peeled and crushed (to release the allicin)
- 1/2 tsp of grey salt or pink himilayan salt (good mineral content)
- 1/3 -1/2 cup filtered water
- 3 TBSP of freshly squeezed organic lemon juice
- 1/2 cup of packed organic basil leaves
- Black sesame seeds for garnish
Instructions
- Wash your veggies and cut off the ends to prepare for Spirooli.
- Soak the nuts in filtered water and set aside for 30 minutes.
- (all nuts have a digestive inhibiting enzyme on the surface, the soaking removes this enzyme)
- Soak your nuts baby! :) All nuts have this and should be soaked before ingesting....
- -Secure the Zucchini onto your Spirooli and make your spiral noodles
- -Repeat with the carrot
- -Set the noodles aside and make your pesto.
- -Put all of your sauce ingredients into the food processor or blender and blend until smooth and creamy.
- Put the noodles into a bowl, top with a bit of the sauce and toss till the noodles are covered.
- Put some of the coated noodles onto a plate or into a bowl and sprinkle with some black sesame seeds for a lovely colour and flavour. Its fine without...but i love it this way:)
- Delicious, healthy and guilt free:)

What is Gluten to begin with?
Gluten is a protein found in wheat, all forms of wheat such as wheat germ, barley and rye. (Buckwheat is not glutenous and is safe to eat) . Gluten is also in a long list of Wheat additives that are common in processed foods that line the grocery store shelves. It is the MOST commonly found additive ...and is found in almost everything packaged. There is an awesome website that is invaluable when learning about Gluten . Either you can become a label reader or you can do what i have and move to a mostly plant rich diet . A healthy lifestyle that is filled with vegetables, fruits , nuts , beans are all natures gifts that are very naturally gluten free...yeah! :)

Its a simple fix really if you cut out packaged foods mostly....learn to read the labels and know what you are ingesting.
Wheat and gluten allergies are one of the top allergens that affect children under 3 years old.....who knew right?
Millions suffer needlessly, but once you know......you can do better and feel better:)
I eat mostly a plant strong diet, but on occasion do buy a box of Gluten free pasta made from either brown rice or Quinoa...and they taste awesome! :)

Being diagnosed with gluten intolerance was the beginning of a much healthier lifestyle for me and it can be for you too! Dont be sad or mad about your diagnosis, embrace it and all the healthy changes you are finally making:)
