Delicious Raw and Vegan Cauliflower Gumbo Recipe

This is my Vitamix Recipe for making warm Cauliflower soup/gumbo and it is absolutely guilt free!:)

From prep to sit down and enjoy is under 10 minutes...cant beat that:) From starving to enjoying...is only a few steps away. These are all the ingredients i use to make 2 bowls for my hungry self:)

Everything you need tossed into your Vitamix or food processor. - Gather all your ingredients

No preheating required...this recipe is all made in your Vitamix or foodprocessor ...no heating makes this recipe RAW goodness with all the vitamins, enzymes and minerals intact:)

-Have your Vitamix/blender or Food processor ready.

-Soak 2 Tbsp of dry packed sun dried tomatoes in filtered water for 5 min.

To your blender or Food processor add the following :

- The soaked tomatoes

- 1 cup of almond mylk (protein)

-1/8 C of organic extra virgin olive oil or MCT oil (we need healthy fats to assimilate vitamins/minerals)

-1/2 Tsp of Pink Himilayan salt or sea salt (minerals)

- 1/4 C Nutritional yeast (lots of B vitamins for vegans:)

- 2 C organic cauliflower Divided (1-1/2 C into blender) (1/2 C raw to put in finished soup/gumbo)

-1 Tsp fresh organic lemon juice (lemon juice keeps us alkaline)

- 1/2 Tsp of organic tumeric powder ( a great anti cancer root)

-1/4 C of red onion (has important health benefits through quercetin, allicin and chromium )

- a couple small sprigs of your favorite herb , i love fresh basil and oregano myself.

- 1 large garlic clove (crushed 5 min before using to activate the allicin) (Medicinal Activity in Garlic is measured by it’s Allicin content) Good stuff! :)

Put all ingredients except for reserved cauliflower...into your Vitamix and blend until smooth and warm (below 115 deg for a Raw dish) but you can blend longer for a hot soup as well. If doing in your food processor...blend until smooth.

Serve in your favorite bowl and crumble remaining 1/2 cup of florets into your soup....garnish with your favorite fresh herbs, thyme, oregano or basil.
